SCARCITY & SUPPLYManuka is not farmed, which means honey supply is rare, variable, and volatile.
Hives must be set ‘just right’ every flowering season, enabling bees to focus only on specific plants.
REMOTE AND WILDTo create monofloral manuka honey you need two things: Remote areas with a lot of space so bees remain within range, and a large coverage of wild Manuka trees so they don’t get distracted.
These requirements mean monofloral manuka is limited to out-of-the-way regions of New Zealand’s natural landscape.
The nectar challengeMānuka plants bloom 2-6 weeks each year in late spring - if you miss it you have to wait until next year. Manuka flowers are extremely delicate and susceptible to even slight variations in climate, rainfall and wind. Individual flowers may only open for 5 days, leaving a very small window for bees to find and collect nectar. Finally, weather extremes also keep bees from harvesting in the very small bloom window that flowers are open. New Zealand’s remote island location and unpredictable weather conditions make this even more unpredictable.
Why Manuka?Known scientifically as Leptospermum Scoparium, the name ‘mānuka’ has Māori origins and has long been used for therapeutic purposes. Manuka honey is so special it has its own potency rating - MGO - showing the level of attribute markers, ranking from 10 to over 500. To be labeled monofloral, all New Zealand Manuka honey must be rigorously tested and Certified UMF™

Mānuka honey is New Zealand’s most famous honey - maybe even the world's most famous. When we first experimented with it, we were blown away. Nothing is added - just Mānuka honey - and the complexity of flavours is unlike anything you’ve tried before.
Mānuka mead is deep, rich, and layered, with flavours that shift as you sip. The weight of it on the palate is reminiscent of port, but it’s more moreish, more nuanced. It carries the land it comes from in every drop - earthy, spicy, and sweet.

Sourced from the Forest, not farmed.
In the forests of Aotearoa, bees collect honeydew straight from the trunks of the beech trees. No forest clearing, no irrigation, no bulldozers. Just trees, bees and time.

Kānuka thrives in New Zealand’s native forests, and by sourcing from beekeepers who take their hives deep into the bush, we help support the regeneration of these vital ecosystems.
